While driving through the countryside of Calgary, I caught this sunset over the fields of Canola starting to blossom. I was drawn by the sunset at first, but the fields of the canola with no end in sight took my breath away. The entire area would soon turn to a sea of bright yellow canola rolling up and down the hills, and that is how the areas are the world’s largest growers of canola. Did you know that the canola name comes from CANadian Oil, Low Acid, developed from rapeseed by Canadian scientists back in the ’60s?
